Bella Vita Grilled Chicken Salad

This is more a listing of ingredients than a true recipe for a delicious spring/summer salad that I had at a popular local restaurant. The amounts for each ingredient can be altered to your taste. I wanted to remember all the ingredients in the salad so that I could duplicate it at home.
Ingredients:
1 chicken breast, marinated with olive oil and rosemary then grilled
1/4 cup fennel, shaved
1/4 cup pear, cut in matchsticks
1/8 cup parmesan cheese, shaved
1 fig, baby sized, cut into slices
2 tablespoons cashews
1/4 cup red pepper, cut into matchsticks
1 tablespoon red onion, shaved
2 cups lettuce, mixed, red romaine, arugula
2 tablespoons fat-free honey-dijon salad dressing
Directions:
1. Mix all ingredients. Place sliced chicken breast ontop of lettuce mixture. Serve with dijon vinegrette.
