Bell Pepper Slaw

This is like coleslaw with bell peppers added.
Ingredients:
3 tablespoons sugar
salt & freshly ground black pepper
1/2 cup cider vinegar
1 1/2 teaspoons celery seeds
1 1/2 teaspoons mustard seeds
6 bell peppers, cut into very thin strips (red orange and yellow)
2 stalks celery, chopped fine
4 green onions, chopped fine
1/2 head green cabbage, sliced thin then roughly chopped
3 tablespoons dijon mustard
1/2 cup mayonnaise
Directions:
1. Whisk together sugar, 2 teaspoons salt, and vinegar in a large bowl until the sugar dissolves; add mustard seeds and celery seeds and 1/2 teaspoon pepper.
2. Stir in bell peppers, celery, green onions, and cabbage; toss to coat.
3. Refrigerate one hour.
4. Add mustard, mayonnaise, and toss; refrigerate until serving.
