This bright red creamy puree has an alluring mix of flavors. Serve it as a dip or to accompany fish. Arabesque Ingredients:
6 red bell peppers, roasted and peeled |
2 cloves garlic, crushed |
4 tbsp red wine vinegar |
1 pinch of cayenne |
1 tsp ground cumin |
4 tbsp extra virgin olive oil |
2 tbsp parsley, chopped |
2 tbsp cilantro, chopped |
1 tsp grated lemon peel |
Directions:
1. Blend the peppers into a puree in a food processor with the garlic, vinegar, cayenne, cumin, and olive oil. 2. Put puree in a serving bowl and mix in the chopped parsley, cilantro, and lemon peel. |
