My mom's recipe for Belgian waffles, one of my favorite breakfast dishes. Cooking times and amount per waffle will vary depending on your waffle iron. Ingredients:
1 pkg. dry yeast |
2 cups lukewarm milk |
4 eggs, separated |
1 teaspoon vanilla |
2 1/2 cups sifted flour |
1/2 teaspoon salt |
1 tablespoon sugar |
1/2 cup melted butter |
Directions:
1. Sprinkle yeast over milk; stir to dissolve. 2. Beat egg yolks and add to yeast mixture with vanilla. 3. Sift together flour, salt and sugar; add to liquids. 4. Stir in melted butter and combine thoroughly. 5. Let mixture stand in a warm place about 45 minutes or until mixture doubles. 6. Beat egg whites until stiff; carefully fold into batter. 7. Use roughly two typical soup ladles per waffle, and cook for about 3 minutes total, depending on your waffle iron. 8. You may need to flip the waffle halfway through to get consistent browning. |
