Tasty mild curry. Can kick up thee heat if you like it hotter. Ingredients:
1t. vegetable oil |
1 onion,thinly sliced |
1 garlic clove,chopped |
1/2t salt |
2t. curry powder |
1c unsweetened coconut milk |
1(141/2oz) can diced tomatoes,drained |
1t. tomato paste |
1lb. chicken breasts,boned,skinned and cut in 1 cubes. |
3c baby spinach |
2c hot cooked rice |
Directions:
1. In a lg skillet,heat vegetable oil over med heat. Add onion,garlic and salt;cook,stirring,until softened,7 mins 2. Add curry powder and cook,stirring,1 min. Stir in coconut milk,tomatoes and tomato paste;cook,stirring occasionally,until thickened,10 mins. 3. Add chicken and simmer until cooked thru,about 6 min. Turn off heat Add spinach and stir till wilted,1 min 4. Serve over hot rice |
