Beginner Level Oatmeal Raisin Bread |

Can't beat this when it's hot right out of the oven and slathered with butter. Ingredients:
2 cups whole wheat flour |
2 cups rolled oats |
2 cups buttermilk |
1 1/2 cups raisins |
1 cup firmly packed light brown sugar |
3 eggs (always use large eggs, unless otherwis designated) |
2 tablespoons baking soda |
2 tablespoons baking powder |
Directions:
1. Preheat oven to 350 degrees. 2. Generously grease 9x5 inch loaf pan. 3. Combine ingredients thoroughly. Spoon into pan, filling just until 3/4 full, to allow for rising during baking. 4. Bake until toothpick inserted in center of loaf comes out clean, about 1 hour. Remove from the pan and place on a wire rack to cool. |
