Anyone like beets? I sure do. From, How Many Potatoes in a Pound? Ingredients:
5 fresh medium-size beets (about 1 1/4 lbs.) |
6 c water |
1 tbl. vinegar |
1 tsp. salt |
1 tbl. cornstarch |
1 tbl. brown sugar |
1 tsp. grated orange peel |
3/4 tsp. salt |
dash of pepper |
2/3 c orange juice |
1/4 c vinegar |
Directions:
1. Cut off all but 2 inches of beet root tops. Wash beets and leave whole with root ends attached. Place beets in a saucepan with water, vinegar (to preserve color) and salt. Bring to a boil. Reduce heat and simmer until beets are tender, 45 to 50 minutes adding more water if necessary. 2. Run cold water over beets; slip off skins and remove root ends. Slice, dice or cut into shoestrings. 3. In a saucepan, mix together cornstarch, brown sugar, grated orange peel, salt and pepper. Gradually stir in orange juice and vinegar. Cook, stirring constantly, until mixture thickens and boils. Boil for 1 minute, stirring. Stir in beets; heat through. |
