My neighbour, one of the best cooks I know, gave me this recipe. We love it! Ingredients:
1 medium onion, finely chopped |
1/2 cup cooking oil |
4 cups cooked beets, cut into thin strips |
1 cup sliced cooked mushrooms |
3 cloves crushed garlic |
1 tbsp sugar |
2 tbsp vinegar |
1/4 tsp salt |
1/4 tsp pepper |
Directions:
1. Saute onion in cooking oil until golden, but not brown. Add remaining ingredients and stir gently. Chill overnight in the refrigerator. 2. We use fresh beets, so the cooking time would be increased. |
