Beets With Marmalade-ginger Glaze |

The sweet taste of marmalade and bright taste of fresh ginger combined make a great sauce for beets. Fresh ginger and powdered ginger are quite different in taste, but I favor fresh ginger in this recipe, although either could be used. Ingredients:
1 can (14 1/2 oz.) sliced beets or about 2 cups fresh |
1/3 cup marmalade |
2 tablespoons lemon juice |
2 tablespoons butter |
2 tablespoons beet liquid |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1/8 teaspoon ground ginger or 1 tsp fresh grated ginger |
Directions:
1. Drain beets, reserving liquid. 2. In a saucepan over low heat, stirring constantly, melt marmalade with lemon juice, butter, and beet liquid. 3. Blend in seasonings then add beets. Simmer uncovered for at least 5 minutes, stirring occasionally to glaze all beets. Add a cornstarch slurry for a thicker glaze. |
