Beets with Apples in Special Sauce |

This sauce is addictive. Feel free to adjust the quantities of beets and apples according to your taste. Ingredients:
1 (12 ounce) can sliced beets, , drained with liquid reserved |
2 teaspoons lemon juice (fresh, if posible) |
1/4 cup balsamic vinegar |
1/2 teaspoon mrs. dash seasoning mix (or other sodium-free spice) |
1 tablespoon brown sugar |
1 teaspoon cornstarch |
1 tart green apple, peeled and sliced |
Directions:
1. In a large skillet over medium heat, combine 1/4 cup of the beet liquid, vinegar, lemon juice, salt, brown sugar and cornstarch; mix well. 2. Cook, stirring constantly, until thickened and clear. 3. Stir in beets and apple. 4. Reduce heat to low and gently simmer for 15 minutes. 5. Serve warm. 6. Freeze leftovers. |
