Delicious and SO good for you, this is a great winter salad that you can serve at any temperature. If you can, roast rather than boil the beets for best flavour. Ingredients:
1/2 cup non-fat yogurt |
1 tbsp dijon mustard |
1 tbsp yellow mustard |
1 tsp horseradish |
1 pound cooked beets, peeled and diced |
1 tsp dillweed |
Directions:
1. Mix the yogurt, mustards and horseradish. 2. Stir in the beets and dillweed. 3. Serve immediately or chill. |
