Beets In Orange Honey Sauce |

My recipe of a wonderful way to use summer beets from the garden.! Ingredients:
4 to 6 large beets, peeled, cooked tender and sliced in circles |
orange sauce |
1 cup orange juice or more if needed |
1/4 cup sugar |
2 tbs. cornstarch |
salt and pepper to taste |
fresh grated nutmeg. |
honey, about 1/4 cup |
Directions:
1. Prep time does not include cooking of beets 2. In a saucepot stir together the orange juice, cornstarch, sugar and salt and pepper until well mixed. . 3. On medium heat, stir continuously until mixture starts to thicken. 4. Stir in the sliced beets. 5. Mixture will thin somewhat. 6. Add honey to taste ( about 1/4 cup ) and fresh grated nutmeg to taste and stir until well heated and sauce is thick and smooth. |
