Beets and Potatoes With Truffle Oil |

YUMMY and pretty. Great for a dinner party. Ingredients:
4 potatoes (scrubbed) |
4 small beets (scrubbed) |
2 tablespoons truffle oil |
1/4 cup butter |
salt & fresh ground pepper (to taste) |
half-and-half (as needed) |
Directions:
1. Boil the potatoes and beets until tender. 2. Drain. Let cool. Peel. 3. Mash with the rest, adding enough half and half to achieve desired consistancy. 4. YUM! |
