Beetroot, Pumpkin and Chickpea Salad |

Healthy and delicious summer treat Ingredients:
600 g beets |
2 teaspoons olive oil |
2 garlic cloves, crushed |
500 g pumpkin |
150 g chickpeas, canned |
30 ml olive oil |
30 ml balsamic vinegar |
100 g baby spinach leaves |
100 g feta cheese |
Directions:
1. Bake beetroot mixed with gralic and olive oil for 10 mintes 2. Add pumpkin to the baking dish and bake for a further 20 minutes 3. Combine chickpeas oil and vinegar in a large jug 4. Place beetroot, pumpkin, spinach and chickpea mix in a large bowl and toss gently 5. Serve topped with crumbled feta |
