This is healthy dish that is easy to make, and your family will love. Ingredients:
6 peeled and chopped medium beets |
2 c. beef stock |
salt and freshly ground pepper to taste |
heavy cream |
3 tbsp. of olive oil |
1chopped medium onion |
3 chopped cloves of garlic |
Directions:
1. Put a little olive oil in a large pot over medium flame. 2. Then Saute the onions and garlic. You will know the onions are done because they turn yellow. 3. Now stir in beets, cooking for about 1 min. 4. Add in the stock, with a dash of salt and pepper. 5. Let this boil around 20 min.(until beets are tender.) 6. Allow this to cool. 7. In small batches, add to a food processor, pulsing softly until the beet mixture as become a liquid. 8. You can now return this to the pot and simmer. 9. Add sour cream to the top and your finished! |
