Beet Souffle Salad

Even people who say they don't like beets will eat this.
Ingredients:
1 (4 serving size) lemon jell-o
1 1/4 cups boiling water
1/4 cup beet juice
1/2 cup mayonnaise
1/4 teaspoon salt
dash ground black pepper
1 cup canned beets, diced
1 cup green cabbage, shredded
1 tablespoon sweet onion, minced
2 hard cooked eggs, sliced or chopped (optional)
Directions:
1. Dissolve Jell-o in boiling water.
2. Add beet juice, mayonnaise, salt and pepper. Mix well.
3. Chill until thickenend.
4. Beat with electric mixer until fluffy .
5. Fold in vegetables.
6. Arrange hard cooked egg in bottom of ring mold. (I frequently leave the eggs out.)
7. Gently spoon in gelatin mixture.
8. Cover and chill until firm.
