Beet Salad With Pistachios and Feta

Ahhh, love beet salad - a staple in our home, both summer & winter. Got this from the Miami Herald.
Ingredients:
3 tablespoons orange juice
1 tablespoon white wine vinegar
1 tablespoon honey
2 tablespoons extra virgin olive oil
4 beets, peeled
4 cups romaine lettuce
2 tablespoons pistachios
2 tablespoons feta cheese
Directions:
1. Whisk together orange juice, vinegar and honey. Drizzle olive oil into mixture and whisk until blended; set aside.
2. Place beets through the shredding disc of a food processor. Toss beets with half of dressing mixture.
3. Toss romaine with remaining dressing and divide among 4 salad plates.
4. Top each plate with beets.
5. Sprinkle with pistachios and feta cheese.
