Beet Salad With Pistachios and Feta |

Ahhh, love beet salad - a staple in our home, both summer & winter. Got this from the Miami Herald. Ingredients:
3 tablespoons orange juice |
1 tablespoon white wine vinegar |
1 tablespoon honey |
2 tablespoons extra virgin olive oil |
4 beets, peeled |
4 cups romaine lettuce |
2 tablespoons pistachios |
2 tablespoons feta cheese |
Directions:
1. Whisk together orange juice, vinegar and honey. Drizzle olive oil into mixture and whisk until blended; set aside. 2. Place beets through the shredding disc of a food processor. Toss beets with half of dressing mixture. 3. Toss romaine with remaining dressing and divide among 4 salad plates. 4. Top each plate with beets. 5. Sprinkle with pistachios and feta cheese. |
