Another very delightful salad. This goes great on a salad buffet. Can also be served as an appetizer. I have served it with chicken, pork and seafood and it goes well with all. Hope you enjoy it as much as we do.
Ingredients:
2 pounds raw beets
dressing
1 cup water
1 tablespoon sugar
2 teaspoons apple cider vinegar
1/2 teaspoon cinnamon
1 teaspoon grated horseradish
1 pinch allspice
1 pinch ground cloves
Directions:
1. Place beets in a pot with enough water to cover them then bring to a boil and simmer 3 hours.
2. Cool beets under cold running water then peel off skin and slice or dice to your preference.
3. Bring 1 cup of water to boil then stir in vinegar and spices and pour hot mixture over beets.
4. Let cool.
5. Cover and refrigerate.
6. Serve cold.
