                    When I was growing up, mom would turn leftover beets into a salad using mayonaise. I didn't particularly care for it. But someone mentioned that that beets pairs well with balsalmic vinegar and lemon. Hmmmm so I tossed together a quick recipe with some leftover beets and I ended up rather enjoying it! Ingredients: 
                    
                        
                                                6 -8 beets, small  |  
                                                2 teaspoons olive oil  |  
                                                1 pinch salt  |  
                                                1 pinch pepper  |  
                                                1 tablespoon balsamic vinegar  |  
                                                1 tablespoon basil, fresh  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Coarsly dice cooled beets into bite-size pieces. Add remaining ingredients and toss. Serve with mixed greens or with cottage cheese. Add some lemon zest and pepper to the cottage cheese to liven it up!                              |
