Using leftover beets, I came up with this delcious pesto which can be used for a salad, garnish or whatever you love to use it for. Garnish with a dollop of thick yoghurt or sour cream if you wish Ingredients:
3 medium fresh beets |
1/4 bunch italian parsley, chopped |
1 garlic clove minced |
1/4 cup almonds chopped fine |
salt and pepper |
olive oil as needed |
optional: grated parmesan or romano cheese |
salt and pepper to taste |
Directions:
1. Cook beets by favorite method 2. when cool, peel and cut up 3. Place in food chopped and chop fine ( not a puree ) 4. Chop almonds, parlsey and garlic together 5. Mix all together 6. Add extra virgin olive oil to taste 7. Season to taste 8. Add grated cheese if desired |
