A very tender, pink-hued pancake perfect for Valentines Day! Ingredients:
1 c minced cooked beets |
2 tbsp cornstarch |
4 egg yolks; beaten |
3 tbsp evaporated milk |
1 tsp sugar |
1/4 tsp salt |
1/2 tsp nutmeg |
Directions:
1. Combine all ingredients in a blender. 2. Process thoroughly. 3. Cook as for pancakes in a hot buttered skillet. |
