3 large beets |
2 tablespoons extra virgin olive oil |
3 tablespoons balsamic vinegar |
1 shallot, minced |
1/2 orange, juice and minced zest therefrom |
2 seedless oranges |
1/4 cup chopped fresh mint |
1 cup crumbled feta |
sea salt |
fresh ground black pepper |
8 ounces mixed baby greens |
Directions:
1. Cover beets with water in small saucepan. Bring to boil. Simmer until tender. About 30 minutes Drain and cool. Peel and cut into 1/4-in slices. 2. Vinaigrette: whisk together olive oil, vinegar, shallot, orange juice, and zest in small bowl. 3. Peel oranges and segment them over a bowl to catch the juice, removing all white membrane. 4. Combine orange segments with the juice, sliced beets, vinaigrette, mint, and feta cheese. Season to taste with salt and pepper. 5. Fold in salad greens and divide among 4 plates. |
