A fantastic side dish, using beautiful beet greens! Try serving under a nice piece of grilled fish. Ingredients:
1 bunch beet greens |
4 slices of smoky bacon, cut into strips |
1/4 cup walnut pieces |
1 tbsp walnut oil |
salt and pepper to taste |
Directions:
1. Wash beet greens thoroughly 2. Cut off the stemy end from the greens and cut into 1 pieces 3. In a large skillet over medium heat, cook bacon until browned 4. Toss in walnuts and toast until they release a nutty aroma 5. Add beet greens and saute until greens are wilted. 6. Season with salt and pepper and drizzle with walnut oil. 7. Serve immediately. |
