Can be a good light lunch or a side dish. Healthy and fully balanced. Plus, it satisfies my salt cravings... Ingredients:
the tops of one bunch of beets |
olive oil |
4 cloves garlic |
salt |
2 slices bacon, chopped |
1/3 can northern white beans |
1 cup cooked brown rice |
Directions:
1. Wash and cut beet greens into 1-3 inch pieces- be sure to remove all dirt and sand! 2. Roughly chop garlic. 3. Saute garlic in 1 TBSP olive oil until fragrant. 4. Add greens and 1/8 cup water. 5. Cover and cook, stirring occasionally until veggies have softened. 6. Remove veggies from pan and keep warm. 7. Add bacon to pan and stir quickly until cooked. 8. Add greens back to pan with bacon, along with white beans and stir to mix well. 9. Serve on a bed of brown rice. |
