If you like beets this is yummy with the feta cheese oh my! Ingredients:
2 lbs beets |
1 tablespoon olive oil |
1 teaspoon white wine vinegar |
1 teaspoon of red wine vinegar |
pinch of sea salt |
pinch of freshly group pepper |
1/3 cup feta cheese |
1 tablespoon mint |
Directions:
1. 1. You can use fresh beets and just slice them into wedges 2. 2. To make the vinaigrette - in a small bowl whisk together the oil, vinegar and salt and pepper. pour the vinaigrette over the beets and then sprinkle with the feta and mint |
