Beet and Sunflower Seed Salad |

A quick, light, healthy, crunchy side salad! Ingredients:
1 lb raw beet, peeled and finely grated |
2 ounces sunflower seeds, toasted |
1 orange, juice and zest of |
2 tablespoons fresh parsley, chopped |
salt and pepper |
Directions:
1. Mix together the beet, orange juice and zest and parsley. Season well and allow to stand for 20 minutes. 2. Just before serving stir in the toasted sunflower seeds. |
