Beet And Feta Dip

This is the most beautiful red color, and the flavors are wonderful
Ingredients:
2 beets, trimmed, peeled and quartered
1 t tabil spice blend (in my recipes)
8 ounces (scant) feta cheese
2-3 t balsamic vinegar
Directions:
1. In a saucepan combine beets, tabil, and just enough water to almost cover the beets.
2. Bring to a boil, reduce heat and simmer, stirring occasionally, until beets are tender and water is almost completely evaporated.
3. Place cooked beets, feta and vinegar in a blender and blend until smooth.
4. Serve with crusty bread or crudites.
