Beestings, also known as Colostrum, is the first milk, rich in protein and other nutrients, that a cow produces for several days after the birth of a calf. In some Celtic regions, this milk is highly valued, and is made into cheese curds and pancakes. Read more . It is speculated that these foods were originally used as offerings to the Goddess, but nowadays are a treat to share with family and friends. Ingredients:
5 cups flour |
1 teaspoon baking soda |
large pinch of salt, or to taste |
1 egg yolk |
2-3 teaspoons sugar |
4-5 cups beestings |
butter or lard for frying |
Directions:
1. Mix the flour, baking soda, salt, egg yolk and sugar in a large bowl. 2. Beat in enough of the beestings to create a batter of the desired thickness. 3. Drop tablespoonsful of the batter on a hot greased griddle and cook for 4 to 6 minutes on each side. 4. Serve with rich butter, cream or syrup. 5.
