Ingredients:
2 cup(s) vegetarian vegetable broth
1 carrot chopped
1 beet sliced
1 potato diced
salt and pepper to taste
1/2 teaspoon(s) rosemary
2 tablespoon(s) light sour cream
Directions:
1. Combine vegetable stock and vegetables in a medium saucepan on medium-high heat. Simmer for 20 minutes. Add salt, pepper and rosemary. Stir in sour cream and serve.
