BEER RICE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Richardson, Texas in 2006. Ingredients:
1 cup brown rice |
1 cup beer allowed to go flat |
1-1/4 cups chicken broth |
1 tablespoon butter |
1/4 cup peanuts salted and coarsely chopped |
1/2 teaspoons salt |
1/2 teaspoons freshly ground black pepper |
Directions:
1. Preheat oven to 350 then place all ingredients in lightly coated casserole dish. 2. Cover and bake until all liquid is absorbed about 1-1/4 hours. |
