Beer Rice

A different rice side dish that goes well with chicken or pork.
Ingredients:
1 cup rice, uncooked (not instant)
1/2 cup onion, chopped
1/2 cup red pepper, chopped
1/2 cup butter, melted
16 ounces chicken broth (canned is okay)
3/4 cup beer
1/4 teaspoon thyme
Directions:
1. Saute onion and pepper in butter until tender.
2. Add chicken broth, rice, beer, thyme and salt and pepper to taste.
3. Bring to a boil, cover and reduce heat.
4. Simmer for 30- 40 minutes until liquid is absorbed and rice is done.
