I was leary of this one but made it recently and it was really, really, good. My husband and neighbor loved it as well. Enjoy Ingredients:
2 tablespoons olive oil |
4 medium potatoes cut in 1/2 wedges |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 medium green sweet pepper cut in 1/2 wedges |
1/2 cup chopped onion |
1/4 cup pale ale, lager or amber beer |
1/4 cup beef broth |
1 tablespoon brown sugar |
Directions:
1. In a skillet heat olive oil over medium heat then layer potatoes into skillet. 2. Sprinkle with salt and pepper then cook uncovered over medium heat for 15 minutes. 3. Turn occasionally then stir in green sweet pepper and onion then cook and stir 5 minutes more. 4. Add beer, broth and brown sugar then cook uncovered 5 minutes more. |
