Beer Chicken Not Beer Butt Chicken |

Unique flavor combo, a beer lovin' bonanza. Ingredients:
1 12 oz can/bottle beer...take yer pick |
4 boneless chicken breast halves |
2 t butter |
1 c sliced mushrooms |
1 clove garlic, minced (of course garlic!) |
1 t grated parmesan cheese |
Directions:
1. Pour 1/2 of the beer in glass dish or bowl. Add chicken breasts, toss to coat, cover and refrigerate for 30 minutes to marinate. 2. Melt 1 T butter in a large skillet over medium heat. Saute garlic, add mushrooms and saute for 5 - 10 minutes or until cooked; remove from skillet and reserve. 3. Melt remaining 1 T butter in the skillet over med high heat and add chicken. Saute 5 - 6 minutes on each side or until cooked through and juices run clear. Reduce heat to low, pour remaining beer over chicken and add reserved mushrooms/garlic. 4. Cover and let simmer another 5 - 10 minutes. 5. Sprinkle with parmesan cheese and serve with cooked rice or pasta 6. Garnish with fresh parsley. |
