Ingredients:
2 1/2 cups low-fat biscuit and baking mix |
1/2 cup cornmeal |
3/4 cup (3 ounces) shredded reduced-fat cheddar cheese |
1/2 cup chopped green onions (about 2 large) |
2 teaspoons dry mustard |
1 teaspoon dried dillweed |
1 (12-ounce) can light beer |
vegetable cooking spray |
Directions:
1. Combine first 6 ingredients; stir well. Add beer, stirring just until dry ingredients are moistened. 2. Spoon batter evenly into muffin pans coated with cooking spray, filling two-thirds full. Bake at 375° for 25 minutes or until golden. Remove from pans immediately. |
