What else needs to be said? Great with chili, beer cheese soup, tortilla soup, or as a morning after breakfast...if you're up for it. Ingredients:
1 cup flour |
3/4 low-fat cheddar cheese |
4 teaspoons sugar |
1 1/4 teaspoons baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
2/3 cup beer |
1 egg (beaten) |
Directions:
1. Measure out 2/3 cup beer-drink rest. 2. Preheat oven to 375°F. 3. Spray 6 muffin cups with nonstick cooking spray. 4. Spoon flour into measuring cup& level off. 5. Combine flour, cheese, sugar, baking powder, baking soda, and salt and mix well. 6. Add beer and egg, and stir into dry mixture until just moistened. 7. Divide evenly into muffin cups (about 3/4 full). 8. Bake 17-22 minutes, or until golden brown and toothpick inserted into center comes out clean. 9. Best served warm- great with chili or tortilla soup. |
