Beer Cheese Bread

This is my wife's recipe. She made it for me when we were dating and I have been hooked since. It's a staple in our home during the wintertime. The smell is so rich and comforting.
Ingredients:
12 oz beer either lager (bud, bush etc) or dark (guinness)
guinness gives the bread a dark rustic colour
1/2 cup warm water
2 tbsp sugar
1 tbsp salt
2 tbsp butter
8 oz grated swiss or american cheese (kraft deli slices) cut up
5-6 cups flour
2 pkg regular yeast (not instant rise)
Directions:
1. In a saucepan, combine beer, water, sugar, salt, butter & cheese
2. Over low/med, heat the mixture stirring often until it steams and cheese is melty. DO NOT BOIL
3. Remove from heat and let cool to lukewarm, about 100 Fahrenheit
4. In a large bowl combine 2 cups flour with yeast
5. Add warm cheese mixture (if it is too hot it'll kill your yeasties)
6. Combine well with wooden spoon
7. Stir in remaining flour to make a stiff bread dough
8. Knead properly
9. Let rise until double
10. Punch down and form into 2 loaves
11. Let these rise until double again
12. Bake at 350 degrees Fahrenheit for about 50 minutes or until they are done
13. Remove from oven
14. Rub the end of a butter stick over them and sprinkle lightly with Kosher salt.
15. Enjoy!
