The whole family loved this one. Great for a hot summer day. Ingredients:
4 lbs whole chickens |
1 teaspoon paprika |
1 teaspoon salt |
1/2 teaspoon black pepper |
1/2 teaspoon lemon rind, grated |
12 ounces beer, at room temperature |
2 garlic cloves, minced |
2 sprigs rosemary |
2 sprigs fresh thyme |
1 lemon, juiced |
1/2 teaspoon crushed red pepper flakes |
Directions:
1. Heat grill to medium. 2. Remove giblets and neck from chicken; rinse and pat dry. 3. Combine paprika, salt, pepper, and lemon rind in a small bowl. 4. Rub mixture over chicken. 5. Open beer and remove half. 6. Place garlic, rosemary, thyme, lemon juice and crushed pepper in beer can and pierce 2 holes in top of can. 7. Place chicken cavity over beer can. 8. Place chicken on grill balanced by the can. 9. Cover and grill 1 to 11/2 hours or until thermometer reads 180 degrees in thigh. |
