Beer-Can Chicken

Ingredients:
2 tablespoon(s) rub
Directions:
1. Tbsp all-purpose barbecue rub, divided
2. (3-1/2 to 4 lb) whole chicken
3. Tbsp vegetable oil
4. (12 oz) can beer
5. SPRINKLE 1 tsp Rub inside body cavity & 1/2 tsp inside neck cavity of chicken.
6. RUB oil over skin. Sprinkle with 1 Tbsp Rub, & rub over skin.
7. POUR out 1/2 beer (aboug 3/4 cup), & reserve for another use, leaving remaining beer in can. Make 2 additional holes in top of can. Spoon remaining 1-1/2 tsp rub into beer can. Beer will start to foam.
8. PLACE chicken upright onto beer can, fitting can into cavity. Pull legs forward to form a tripod, allowing chicken to stand upright.
9. PREPARE grill. Place chicken upright over drip pan on unlit side. Grill, covered with grill likd, 1 hour and 15 minutes or until golden & a meat thermometer registers 180 degrees.
10. REMOVE chicken from grill & let stand 5 minutes; carefully remove can.
11. BARBECUE RUB:
12. /4 cup coarse salt
13. /4 cup dark brown sugar
14. /4 cup sweet paprika
15. Tbsp pepper
16. COMBINE all ingredients. Store mixture in an airtight jar, away from heat, up to 6 months.
17. YIELD 2 to 4 servings
