A very nice extra to enjoy with a barbecue
Ingredients:
500 grams self raising flour
1 can of beer (340ml)
1 teaspoon salt
3 tablespoons olive oil or any vegetable oil
1 can sweetcorn (400grams)
Directions:
1. 1 Sift flour into a bowl and make a well in the centre
2. 2 In a jug, mix the beer, oil and salt using a spoon, stir slowly to avoid the beer foaming
3. 3 Add the jug mixture to the flour, and mix well then add the sweetcorn and mix again, the mixture should be a sticky dough, add flour or beer to adjust
4. 4 Spray a large baking bowl or bread pan with a non stick agent or grease and sprinkle with flour and add the dough
5. 5 Leave to stand for 10 minutes to rise
6. 6 Bake for about 50 minutes to 1hour in a preheated oven of 200 deg C, test with a skewer, if it comes out dry, your bread is ready. Leave to cool for about 15 minutes before slicing!
7. You can add or substitute almost anything to the mixture like chopped bacon, fruit, chilli, garlic or whatever your imagination can conjure. Enjoy!
