Spanish rice with beef is one of my favorites and this one meets with my approval. Serve with a green salad and you have a complete meal. Ingredients:
1 lb ground beef, browned & drained |
1 1/2 cups white rice |
3 tablespoons butter |
1/2 cup chopped green pepper |
1/2 cup chopped onion |
2 cloves garlic, crushed |
1 (14 1/2 ounce) can diced tomatoes, undrained |
1 cup hot water |
1 teaspoon chili powder |
1 teaspoon salt |
1/2 teaspoon black pepper |
3/4 cup grated cheddar cheese |
Directions:
1. In a large skillet saute rice for 5 minutes or until golden; stirring constantly. 2. Add ground beef, peppers, onion and garlic. 3. Cook and stir 2-4 minutes or until vegetables are tender. 4. Add tomatoes w/juice, water, chili powder, salt and pepper; mix well. 5. Cover and simmer 20-25 minutes or until rice is tender. 6. Sprinkle with cheese and serve. |
