BEEFY POTATO SKINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ritchie Estate in Balch Springs, Texas in 1984. Ingredients:
8 baking potatoes |
1/2 cup melted butter |
1/2 teaspoon salt |
1/2 teaspoon paprika |
1/2 cup green onions finely chopped |
1/2 cup bacon cooked and finely chopped |
1/2 cup cooked hamburger |
1/2 cup green bell pepper finely chopped |
1 cup shredded cheddar cheese |
1 cup sour cream |
Directions:
1. Scrub potatoes and bake at 400 for 1 hour or until tender. 2. Cool potatoes slightly then cut in half lengthwise leaving 1/4 pulp with the skins. 3. Cut skins in half either across or in strips. 4. Brush skin sides with melted butter and place on baking sheet. 5. Sprinkle pulp sides with salt and paprika. 6. Cover pulp with green onions, bacon, hamburger and green pepper then top with cheese. 7. Bake at 450 for 15 minutes. 8. Garnish with a dollop of sour cream then serve immediately. |
