1 tablespoon olive oil |
2 cups sliced mushrooms |
1 green bell pepper, cut into thin strips |
1 onion, cut into thin wedges |
1 large garlic clove, finely chopped |
1 teaspoon dried basil or 1 teaspoon dried oregano |
1/4 teaspoon hot pepper flakes |
1 1/2 cups thinly sliced cooked flank steaks (or deli roast beef, cut into strips) |
3/4 cup pizza sauce (or tomato pasta sauce) |
salt |
fresh ground black pepper |
4 crusty roll |
6 ounces thinly sliced mild provolone cheese or 6 ounces mozzarella cheese |
Directions:
1. In a large skillet, heat oil over medium-high heat. 2. Add mushrooms, green pepper, onion, garlic, basil, and hot pepper flakes; cook, stirring, for 5 minutes or until softened. 3. Stir in beef and pizza sauce; cook until heated through. 4. Remove from heat; season with salt and pepper to taste. 5. Cut rolls along one side and open like a book; layer with cheese slices. 6. Place on baking sheet under preheated broiler for 1 minute or until cheese melts. 7. Watch carefully. 8. Spoon beef mixture into rolls and serve immediately. |
