I don't recall where I got this recipe but we really enjoy it. Ingredients:
8 uncooked lasagna noodles |
3 cups salsa |
1 lb ground beef |
1 (1 1/4 ounce) package taco seasoning |
1 cup shredded monterey jack cheese |
1 (8 ounce) container sour cream |
1 (15 ounce) can black olives |
Directions:
1. Preheat oven to 350. 2. Cook lasagna noodles according to package directions. 3. Coat a 9x13 baking dish with non-stick cooking spray and spread 1°C salsa in the bottom. Set aside. 4. Brown ground beef over medium heat; drain. Stir in taco seasoning mix and 1°C salsa. 5. Cut each noodle in half fill with 2 T. of the beef mixture, roll up. 6. Place roll-ups in the baking dish. Pour remaining 1°C salsa over the roll-ups & sprinkle with cheese. 7. Cover the dish loosely with foil. Bake 20-25 minutes or until cheese is melted and roll-ups are heated through. 8. To serve, spoon 1 T. of the sour cream on each roll-up and sprinkle with black olives. |
