1 lb ground beef |
1 medium onion, chopped |
1 -2 tablespoon fresh minced garlic |
1 small green bell pepper, seeded and chopped |
1/4 cup grated parmesan cheese (optional) |
salt and pepper |
2 eggs |
1 (14 3/4 ounce) can cream-style corn |
1 cup milk |
1/2 cup vegetable oil |
1 cup cornmeal |
3 tablespoons flour |
1 1/2 teaspoons baking powder |
3/4 teaspoon salt |
4 cups shredded cheddar cheese, divided |
1 medium onion, chopped |
3 jalapeno peppers (seeded and chopped, or to taste) |
Directions:
1. Set oven to 350 degrees. 2. Grease a 13x9 baking dish. 3. In a skillet, cook beef with onion, garlic and bell pepper, until no longer pink, then season with salt and pepper; drain and add in Parmesan if using; set aside. 4. In a bowl, beat eggs, corn, milk and oil. 5. Combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well. 6. Pour half of the batter into a greased baking dish; sprinkle with 2 cups cheese; top with the beef, onion and jalapenos. 7. Sprinkle with remaining cheese; top with remaining batter. 8. Bake, uncovered for 55-60 mins or until a toothpick inserted into corn bread topping comes out clean. 9. Serve warm. |
