Beefy Corn Bread Casserole |

Ingredients:
1 pound lean ground beef |
1 small onion, chopped |
2 or 3 jalapeno peppers, seeded and chopped (optional) |
1 package (8.5 ounces) corn bread/muffin mix |
3/4 teaspoon salt |
1/2 teaspoon baking soda |
1 can (14-3/4 ounces) creamed corn |
1 cup milk |
1/2 cup vegetable oil |
2 large eggs, beaten |
3 cups cheddar, shredded and divided |
Directions:
1. Butter a 13x9x2 pan. 2. Preheat oven to 350 degrees F. 3. Cook beef, onion and peppers in skillet over medium heat until meat is no longer pink. 4. Drain and set aside. 5. Combine corn bread mix, salt, baking soda, corn, milk, oil and eggs in a bowl. 6. Pour half of corn bread mixture into prepared pan. 7. Layer with half the cheese and all the beef. 8. Top with remaining cheese. 9. Carefully spread remaining batter over top. 10. Bake for 40 to 45 minutes OR until toothpick inserted at center comes out clean. |
