Ingredients:
2 quarts water
1 lb meaty beef shanks
2 (15 ounce) cans kidney beans, drained and rinsed
1 (14 ounce) can tomatoes
1 cup sliced carrot
1 cup onion
1 cup diced turnip
1 cup cut green beans
1 celery rib
1 half onion
1 teaspoon dried oregano
1 teaspoon thyme
1 bay leaf
salt and pepper
Directions:
1. Combine all ingredients, except salt and pepper in slow cooker; cover and cook on low for 6-8 hours.
2. Remove beef shanks; cut meat from bones and return to soup. Discard bones and bay leaf; season to taste with salt and pepper.
