Beefed-Up Black Bean Soup |

This is a great hearty soup - one of my hubby's favorites! Like most hearty soups, great with crusty bread. Ingredients:
1 lb lean ground beef |
1 (11 ounce) can black bean soup |
1 (15 ounce) can black beans, rinsed and drained |
1 1/3 cups water |
1 cup salsa |
1/4 cup green onion, thinly sliced |
sour cream (to garnish) |
Directions:
1. Cook beef in 3 quart saucepan until no longer pink. 2. Drain. 3. Stir in soup, beans, water and salsa. 4. Bring to a boil. 5. Reduce heat to low and simmer, uncovered, for 15 minutes. 6. Remove from heat and stir in green onions. 7. Garnish with sour cream. |
