The Yeomen Warders of Her Majesty's Royal Palace and Fortress the Tower of London, popularly known as the Beefeaters, are ceremonial guardians of the Tower of London. The name Beefeater is of uncertain origin, with various proposed derivations. Read more . The most likely is considered to be the Wardens' payment in rations that included beef, as well as mutton and veal, and various historical commentators have noted a preference for beef among the Wardens and the Yeomen of the Guard. I had London Broil left over and thought a nice beef barley soup would certainly have been good payment for the Queen's Beefeaters. Ingredients:
1 lb london broil, cooked and cubed |
1 cup barley |
1 tbsp olive oil |
1 cup onion, chopped |
1 cup green pepper, chopped |
3 cloves garlic, pressed |
1 stalk celery diced |
8 cups beef broth |
2 cups vegetable juice |
1 cup red wine |
8 oz fresh mushrooms |
3 tomatoes chopped |
1/2 cup carrots, sliced |
salt and pepper to taste |
1 tsp oregano |
1 tsp thyme, fresh |
1 bay leaf |
1 tsp fennel seeds |
1 tsp mustard seeds |
1 tsp cayenne |
Directions:
1. Get you crockpot out and pour in the beef broth, vegetable juice, wine, mushrooms, carrots and tomatoes and start it heating up. 2. On the stovetop, heat the olive oil in a medium saute pan and saute the onion, green pepper, garlic and celery. Saute until the veggies are slightly softened. 3. Add saluted vegetables, London Broil, and barley to the broth in the crock pot. Let it simmer merrily along for 4 - 5 hours while London Bridge is falling down. 4. Servings 8 5. Per Serving 6.
