Beef With Green Pepper

This is from the Diana Liu cookbook. This recipe is authentic Chinese. I've made this several times and my family likes it better than the restaurant type.
Ingredients:
1/2 lb beef, shredded
1 tablespoon cornstarch
1 egg white
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon sherry wine
4 tablespoons oil
2 large green peppers, shredded
1/2 teaspoon salt
Directions:
1. Marinate beef in soy sauce, cornstarch, sherry, egg white, and sesame oil for 30 minutes.
2. Heat 2 Tblsp. oil in frying pan until hot.
3. Stir-fry green pepper and salt 2 minutes; remove from pan; set aside.
4. Heat 2 more Tblsp. oil in frying pan until hot.
5. Add meat mixture; stir-fry 3 minutes.
6. Add green pepper and cook 1 minute more.
7. Serve hot.
