I found a Vindaloo sauce in the grocery store and have tried many variations to find a method of cooking it that both me and my husband really like. It's nothing at all like what Moxies serves up but I really enjoy it Ingredients:
1 lb of beef round eye steaks (chop into cubes about 1x1 cm |
2 cups of frozen corn |
1/2 cup finely chopped ginger root |
1 cup finely chopped onion |
1/4 cup of pressed garlic |
one can of vindaloo sauce found in most grocery stores in the asian section |
2 to 3 cups of grated cheese (marble or cheddar works well) |
salt and pepper |
3 to 4 cups cooked rice or chinese noodles |
Directions:
1. saute onions, ginger, and garlic in a tsp of olive oil, and set aside. fry meat, draining excess grease. combine with ginger mixture and add the vindaloo sauce. Let simmer until just boiling and add the frozen corn. Let simmer for 5 min and combine with rice. Mix until all the rice is coated and transfer to a casserol dish, layer with cheese and bake at 350F for about 20 min |
